Sweet Potato Latkes

1 sweet potato, peeled, then grated
4 green onions, sliced white and green parts
1/4 cup whole wheat flour
1/4 cup eggbeaters
Salt and pepper


Mix all, drop in by 1/4 cup fulls (or smaller) onto hot skillet with about 2 tbsp canola oil on it. Cook for 3-4 minutes per side.
